MONTHLY EDIBLES : MEMORIAL DAY BBQ

Memoria Day Outfit ideas

So what’s on your grill this Memorial Day BBQ?

Our day usually begins with the early morning parade, in which the kids participate of course.  With it’s cliche patriotic outfits dotting the sidewalks, the dogs barking and sniffing each others license plates, while hundreds of kids wave their flags at our veterans and participants in the parade.  I revel in every little moment of it.  There is a sense of togetherness and national pride that, despite all our differences, comes together beautifully and with so much color and love.  Come to New Canaan for a real taste of Americana time-lapse.

The day continues after that, with more Americana flavor.  And it wouldn’t be Memorial Day without a BBQ.  I love sprucing things up a bit in the backyard with inviting table settings and pretty details.  Check out some of my ideas below.

Here’s what we’ve got cooking!

Memorial Day BBQ Recipes

1. GRILLED LOBSTERS WITH CHIMCHURRI SAUCE

If you love lobsters, this will blow your mind!  I found this recipe a while back (don’t recall where from) and it has been incorporated into one of our backyard festivities every year.  Lobster in general is a summer luxury, so why not go above and beyond and make it the masterpiece of your Memorial Day BBQ.  I promise your guests will be very pleased!

Instructions
  1. In a small bowl, stir together butter, cilantro, chiles, and lime zest; set aside.
  2. Par boil the lobsters for 2 minutes each. Unless you feel confortable taking a cleaver to live lobster...I don't. Take the lobsters out and using a heavy cleaver, split each lobster in half lengthwise through its head and tail. Transfer the lobster halves, shell side down, to a baking sheet; crack the lobster claws and transfer them to the baking sheet. Drizzle lobster halves and claws with oil and season with salt and pepper.
  3. Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high. Place lobster halves (flesh side down) and claws on grill and cook for 3 minutes. Turn over lobster halves and claws and spread each with some of the cilantro–chile butter; continue cooking until cooked through, about 3 minutes more. Serve with lime wedges.

2. CHILI LIME GRILLED CORN SALSA

Corn on the cob is definitely a summer staple! Last year, Isabelle had just lost her front two teeth and couldn’t quite eat the cob.  So she asked if I could make it into a salad.  E voila!!!  The combination of the sweet corn with the chili lime is out of this world!  You can always make it less spicy for the little ones.

Instructions
  1. Shuck the corn and remove as much of the silk as you can by rubbing the ears with a paper towel.
  2. Put the corn on a hot grill, or in a hot broiler (with the rack at the top position) and let the corn char slightly, rotating 4 times to get even charring. Be careful when doing this as the corn tends to pop, shooting bits of hot corn in unpredictable directions at high speed.
  3. When the corn is done, set it aside and chop the other vegetables.
  4. When the corn is cool enough to handle, put the stem end into a bowl, hold the tip with your fingers. Use a sharp knife to cut the kernels off the cob and into the bowl.
  5. Add the chopped peppers, scallions and cilantro to the bowl.
  6. To make the dressing, zest the lime into a small bowl and then juice it. You want about 1/4 cup of lime juice, so if your limes are dry you may need to use more than one lime.
  7. Add the chili powder, salt and black pepper and whisk the dressing together. Pour the mixture over the salad and toss to coat.

3. GRILLED PEACHES WITH VANILLA ICE CREAM

I do not bake!  Nor do I attempt any type of dessert, except for maybe washed fruit or scooped ice-cream.  What I do well is cook and grill.  And so I thought, “Why not grill dessert?” This is the extent of my skills and yes it does involve a grill.  To be clear, it is also insanely delicious!  Oh, and did I mention EASY?!!!
